PORTSMOUTH, Va. (WAVY) – We were in the kitchen Friday with Kevin Osfolk of The Bier Garden in Portsmouth, and he made Rouladen.
Osfolk described the dish as a roulade, based on the French term, which means “to roll.” He used spicy German mustard, house spice (paprika, pepper, and other seasonings), bacon, German pickles and sauteed onions before wrapping the meat up tightly with kitchen string. Osfolk said if you don’t have kitchen string, you can also try toothpicks.
